Roasted Tomato & Veg Traybake

Traybakes are ideal for spring—minimal effort, maximum flavour.

Ingredients:

  • Tomatoes
  • Courgette
  • Red onion
  • Peppers
  • Olive oil
  • Herbs (thyme or oregano)

Method:

  1. Chop all vegetables.
  2. Toss in olive oil and herbs.
  3. Roast at 200°C for 30–35 minutes.
