Ingredients:
- Tomatoes
- Courgette
- Red onion
- Peppers
- Olive oil
- Herbs (thyme or oregano)
Method:
- Chop all vegetables.
- Toss in olive oil and herbs.
- Roast at 200°C for 30–35 minutes.
