Creamy Tomato & Butter Bean Soup

As the November temperatures begin to drop, there’s nothing quite like a warming bowl of homemade soup.

Our Creamy Tomato & Butter Bean Soup is the perfect recipe for those colder days, combining fresh British tomatoes with creamy butter beans, garlic and herbs to create a delicious, comforting meal.

It’s easy to prepare, packed with flavour and ideal for making ahead for lunches throughout the week.

Ingredients

  • 600g fresh British tomatoes, chopped

  • 1 tin butter beans, drained and rinsed

  • 1 onion, finely chopped

  • 2 garlic cloves, crushed

  • 500ml vegetable stock

  • 100ml double cream or plant-based cream

  • 1 tbsp olive oil

  • 1 tsp dried oregano

  • 1 tsp smoked paprika

  • Fresh basil

  • Salt and black pepper

  • Crusty bread, to serve

Method

  1. Heat the olive oil in a large saucepan over a medium heat.

  2. Add the onion and cook for approximately five minutes until softened.

  3. Stir in the garlic, oregano and smoked paprika and cook for another minute.

  4. Add the chopped tomatoes and allow them to soften for around 10 minutes.

  5. Pour in the vegetable stock and add the drained butter beans.

  6. Simmer gently for 15–20 minutes, allowing the flavours to develop.

  7. Use a hand blender to blend the soup until smooth, or leave some texture if preferred.

  8. Stir in the cream and season with salt and black pepper.

  9. Serve warm with fresh basil and crusty bread.

Why Butter Beans?

Butter beans are a fantastic addition to tomato soup because they create a naturally creamy texture while adding fibre and plant-based protein.

They also have a mild flavour, allowing the sweetness and richness of the tomatoes to remain the star of the dish.

If you prefer a chunkier soup, simply blend half the mixture and leave the remaining butter beans whole.

A Perfect November Lunch

This soup is ideal for batch cooking, particularly during the colder months when you want something warming and convenient.

Store leftovers in an airtight container in the fridge for up to three days, reheating thoroughly before serving.

You can also freeze portions for another day.

At R & L Holt, we love seeing how fresh British tomatoes can be used throughout the seasons, and this comforting soup is a brilliant example of how versatile they can be.
