Creamy Tomato & Spinach Gnocchi

If you’re looking for an easy dinner that delivers plenty of flavour without spending hours in the kitchen, this Creamy Tomato & Spinach Gnocchi is the perfect choice.

Juicy fresh tomatoes create the base of a simple sauce, while spinach and cream make the finished dish wonderfully comforting. Best of all, it can be on the table in around 30 minutes.

Ingredients

  • 500g gnocchi
  • 500g ripe British tomatoes, roughly chopped
  • 2 garlic cloves, crushed
  • 1 small onion, finely chopped
  • 150ml single cream
  • 100g fresh spinach
  • 30g grated Parmesan
  • 1 tbsp olive oil
  • Handful of fresh basil
  • Salt and black pepper

Method

  1. Heat the olive oil in a large frying pan over a medium heat.
  2. Add the onion and cook gently until softened.
  3. Add the garlic and cook for another minute.
  4. Stir in the chopped fresh tomatoes and season with salt and pepper.
  5. Allow the tomatoes to cook for around 10 minutes until they begin to break down and create a sauce.
  6. Meanwhile, cook the gnocchi according to the packet instructions.
  7. Stir the cream into the tomato mixture before adding the spinach.
  8. Once the spinach has wilted, add the cooked gnocchi and stir everything together.
  9. Finish with Parmesan and fresh basil before serving.

Fresh tomatoes bring natural sweetness and acidity to this dish, balancing the richness of the creamy sauce.

Leaving some of the tomatoes slightly chunky also gives the finished sauce plenty of texture, making this a great alternative to reaching for a jar of ready-made pasta sauce.
