Ingredients
- 5 ripe British tomatoes
- ½ red onion, finely diced
- 1 garlic clove, crushed
- Small handful fresh coriander
- Juice of 1 lime
- 1 tbsp olive oil
- ½ tsp chilli flakes (optional)
- Salt and pepper
Method
- Dice the tomatoes and place in a bowl.
- Add the onion, garlic and coriander.
- Stir through the lime juice and olive oil.
- Season with salt, pepper and chilli flakes if using.
- Chill for at least 20 minutes before serving.
