Ingredients:
- Fresh tomatoes
- Garlic cloves
- Olive oil
- Pasta of your choice
- Salt & pepper
- Fresh basil
Method:
- Preheat oven to 200°C
- Place tomatoes and garlic on a tray
- Drizzle with olive oil, season well
- Roast for 25–30 minutes
- Cook pasta and reserve a little pasta water
- Blend roasted tomatoes and garlic into a sauce
- Mix with pasta and loosen with pasta water
- Top with fresh basil
