Tomato and Goat Cheese Crostini

  • Baguette, sliced into 1/2-inch thick rounds
  • 2 large ripe tomatoes, diced
  • 100g goat cheese, softened
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 garlic clove, peeled
  • Salt and pepper to taste


Step 1 – Prepare the baguette slices: Preheat the oven to 190°C. Place the baguette slices on a baking sheet and drizzle with olive oil. Toast in the oven for 8-10 minutes, or until lightly golden and crisp.
