A galette is the perfect recipe when you want something that looks impressive without requiring hours of careful preparation.
Unlike a traditional tart, a galette is designed to have a rustic appearance. Pastry is simply rolled out, filled and folded around the edges – no tart tin and no need for perfectly shaped pastry.
Our September version combines juicy tomatoes with creamy goat’s cheese and sweet caramelised onions.
Ingredients
- 1 sheet ready-rolled shortcrust pastry
- 4 large British tomatoes, sliced
- 150g soft goat’s cheese
- 2 onions, thinly sliced
- 1 tbsp butter
- 1 tsp brown sugar
- 1 tsp balsamic vinegar
- 1 egg, beaten
- Fresh thyme
- Salt and black pepper
Method
- Preheat your oven to 190°C.
- Melt the butter in a frying pan and add the onions.
- Cook gently for around 15 minutes until soft.
- Add the brown sugar and balsamic vinegar and cook for another few minutes until caramelised.
- Place the pastry onto a lined baking tray.
- Spread the goat’s cheese across the middle, leaving approximately 5cm around the edge.
- Spoon over the caramelised onions.
- Arrange the sliced tomatoes on top.
- Season with black pepper and scatter over fresh thyme.
- Fold the pastry edges loosely over the filling.
- Brush the exposed pastry with beaten egg.
- Bake for approximately 30–35 minutes until golden.
- Allow to cool slightly before slicing.

The combination of sweet tomatoes, tangy goat’s cheese and caramelised onion makes this galette feel particularly suited to early autumn.
Serve warm with a simple green salad for dinner, or allow it to cool and take slices for lunch the following day.
