Healthy Tomato & Chickpea Curry (Meat-Free Monday)

A warming, plant-based curry that’s filling, healthy and budget-friendly.

Ingredients:

  • 2 tins chopped tomatoes

  • 1 tin chickpeas

  • 1 onion

  • Curry powder or paste

  • Garlic & ginger

Method:

  1. Fry onion, garlic and ginger.

  2. Add curry spices and tomatoes.

  3. Add chickpeas and simmer 20 mins.

  4. Serve with rice or naan.

Perfect for batch cooking and freezing.
